Pizza Without the Pounds: How to Make Cauliflower Pizza

So easy you can make it yourself!

Pizza is one America’s favorite foods the only problem with that is that it’s typically packed with tons of unhealthy calories. Calories that would take some of us all month long to burn off.

Wouldn’t you love to be able to enjoy one of your favorite foods without the headache of a bunch of unnecessary calories?  My sentiments exactly and this is why I have decided to share this healthy cauliflower pizza recipe with you all. Now you can enjoy one of your favorite meals without the worry of your bikini body being jeopardized.

 

UTENSILS:

• Large bowl
Potato Masher
• Skillet (optional)
• Pizza pan or baking sheet

 

INGREDIENTS:

• 1/2 cup Prego Pizza Sauce (Pizzeria Style)
• 1 cup shredded mozzarella cheese
• 1/2 cup shredded cheddar cheese
• 1/2 cup pepperoni
• Oregano

 

Optional Ingredients:

• Olive Oil
• Crushed red pepper
• Grated parmesan cheese

 

Optional Pizza Toppings:

• tomatoes
• black olives
• bell peppers
• banana peppers
• fresh spinach leaves
• turkey sausage crumbles

 

CAULIFLOWER CRUST

• 1 bag of Cauliflower Crumbles (Cauliflower Rice)
• ½ cup shredded mozzarella cheese
• ½ cup fresh parmesan cheese
• A dash of Italian seasoning
• sea salt and black pepper
• 2 large eggs

DIRECTIONS:

1. Preheat oven to 400 degrees.

2. Follow the directions on the bag to cook the cauliflower. The easiest and quickest way to cook it is by steaming it in the microwave as instructed.

    • Steam in the bag inside of the microwave for 3 to 4 minutes, or:

•Place cauliflower contents into a nonstick skillet (using one teaspoon of olive oil) and cook over medium heat for 5 minutes.

3. Place cauliflower into a large bowl and Mash with the potato masher until it resembles mashed potatoes.

4. Mix the following contents into the bowl of cauliflower: eggs, mozzarella, Parmesan and Italian seasoning, then season with oregano, sea salt and pepper, to taste.

5. Apply a light coat of olive oil spray to the pan.

6. Spread cauliflower mixture onto the pizza pan or baking sheet.

7. Bake for 11-15 minutes, or until golden.

8. Remove from oven and spread the cauliflower crust with pizza sauce, cheeses, pepperonis, spinach and any additional topping you may have chosen.

9. Place pizza into the oven and bake until the cheese has melted about 3-5 minutes (time may vary depending on how many toppings you have).

10. Speckle with grated parmesan cheese and red pepper flakes.

11. Serve and enjoy!
