Have you been looking for a healthy alternative to spaghetti noodles?
Look no further because not only are these noodles a more healthy choice, they’re also very delicious. Squash noodles are the new wave, and I know that once you try these, you’ll never cook another spaghetti noodle again. There is not a lot of preparation time, and the noodles practically cook themselves. All you have to do is pop the squash in the oven, kick your feet up, watch some television and relax for about an hour until it’s done. Sounds easy enough, right?
1 Whole (6 to 8 lb.) squash makes 6 – 8 servings.
Utensils:
- 1 – 1 quart sauce pans with a lid
- 1 – 11in. cookie sheet
- 1 – Fork
- 1 – Plate
Key Ingredients:
- Pepper
- Sea Salt
- Pure Olive Oil
- 1 whole squash (6 – 8 lbs.)
- Preheat oven to 375 degrees
- Wash your squash in lukewarm water before placing it on the cookie sheet
- Let the squash bake for about an hour and fifteen minutes
- If it is still hard, return it to the oven for an additional fifteen minutes
- The squash should be tender enough to cut through without a struggle
- Slice it in half
- Use a spoon to scoop the core from the center
- Using a fork rake across the top of the squash (long direction) Continue this process until there is nothing left in the inside of the squash
- Place sauce pan on the stove (medium heat)
- Pour 2 teaspoons of olive oil in the pan
- Place the noodles in the pan making sure to coat them all with the olive oil
- Season with pepper and sea salt (to taste)
- Stir frequently (noodles should not be on the stove for more than 5 minutes)
- Place on plate or in a bowl, serve and eat
** You can also pair squash noodles with ground turkey and tomato sauce for delicious and healthy spaghetti! Less calories…more bite!
